Pesto Pizza + Sweet Potatoes, Kale & Balsamic Reduction

Serves: 4

Ingredients:

  • Whole wheat pizza dough
  • 1 cup balsamic vinegar
  • 1 tbs maple syrup
  • Walnut Pesto (fresh or Costco’s)
  • 1 lg. sweet potato, peeled and cut into bite sizes
  • 2 tbs. olive oil
  • 1/2 bunch of kale (cut into bite size pieces)
  • salt & pepper

Directions:

  1. Make the pizza dough in advance and pull from the freezer or fridge to bring to room temperature.
  2. Make the pesto by adding all ingredients to a blender (can do ahead of time).
  3. For the balsamic reduction, cook the balsamic vinegar over medium-low heat until it boils.  Reduce heat and simmer for 20 minutes.  Remove from heat and mix in maple syrup.
  4. For the sweet potatoes, turn the oven to 400.  Toss the sweet potato with olive oil and salt and pepper.  Cook on a cookie sheet in the oven for approx. 25 minutes (or until fork tender).
  5. Turn the oven to 425 degrees.
  6. Rollout the pizza dough on a stone and add pesto and sweet potatoes.
  7. Bake for approx. 15 minutes (watch it) in a 425 degree oven.
  8. Saute the kale in olive oil, salt & pepper for a few minutes and place on cooked pizza.
  9. Drizzle the balsamic reduction over the pizzas.
  10. Serve immediately.
