Lentil + Kale Salad + Lemon Tahini Dressing

Lentil + Kale Salad + Lemon Tahini Dressing

Serves: 4-5

Ingredients:

Lentils & Wheat Berries or Grains:

  • 1 cup cooked green lentils
  • 1 cup cooked wheat berries (let soak overnight before cooking) OR 1 cup cooked brown rice / quinoa

Lemon Tahini Dressing:

  • 1/4 cup tahini
  • 1 lg garlic clove
  • 1/2 cup fresh lemon juice (approx. 2 lemons)
  • 1/4 cup nutritional yeast
  • 2 1/2 tbs olive oil
  • 1/2 tsp sea salt (plus more to taste)
  • freshly ground pepper

Salad:

  • 1 1/2 tsp olive oil
  • 1 small red onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 lg tomato, chopped or 3/4 cup cherry tomatoes, sliced
  • 3 cups spinach or lacinato kale, chopped
  • 1/2 cup fresh parsley, minced

Directions:

Lentils & Wheat Berries or Grains:

  1. Cook the lentils as directed on the bag / box.
  2. If using wheat berries, let them soak overnight, then cook as directed on the bag.
  3. If using brown rice or quinoa, cook as directed.

Lemon Tahini Dressing:

  1. Combine all ingredients in a food processor or blender and process until smooth.

Salad:

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the onion and garlic and saute for a 5 minutes, until the onion is translucent.
  3. Add the bell pepper and saute for 5-6 minutes, until most of the liquid has evaporated.
  4. Stir in the tomatoes and spinach or kale and saute until the greens wilt.

Bringing it All Together:

  1. Stir in the lemon tahini dressing, cooked lentils, and wheat berries.
  2. Reduce the heat to low and simmer for a few minutes more.
  3. Remove from heat and stir in the parsley.
  4. Season with salt and pepper to taste.
