Ranch Dressing

Yield: 1/4 cup (enough for 4 salads)

Ingredients:

  • 1/2 cup cashews
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 1/2 tsp apple cider vinegar
  • 8 oz tofu
  • 1 tbs dijon mustard
  • 1 tsp onion powder
  • 2 garlic cloves, minced
  • 1 tsp dried dill or 1 tbs fresh parsley
  • 1 1/2 tsp salt
  • 1/2 tsp pepper

Directions:

  1. Whisk all ingredients in a bowl to blend.
  2. Season with salt and pepper.
