Split Pea Soup

Serves: 4

Ingredients:

Soup:

  • 16 oz. dried split peas
  • 2 cups of chopped carrots
  • 2 cups of chopped celery
  • 1 cup of diced white potato (approx. 1 large potato)
  • 4 cups vegetable broth
  • 4 cups water
  • 1 1/2 tbs olive oil
  • 1 cup onion, chopped

Spices:

  • 1 tsp ground cumin
  • 1/4 tsp ground coriander
  • 1/3 tsp garlic powder or 2 fresh garlic cloves, finely chopped
  • 2 tsp curry powder
  • salt & pepper to taste
  • 1/4 tsp crushed red pepper
  • 1/4 tsp ground cardamom (optional)
  • 1 pinch cinnamon

Other:

  • 1 cup coconut milk
  • grated parmesan cheese

Directions:

  1. Wash and drain the peas.
  2. Add peas, water, and vegetable broth to a pot and simmer uncovered for 45 minutes.
  3. Saute the onions in the olive oil at medium heat for about 5 minutes. Add all spices. Saute 2 more minutes.
  4. Add onion & spice mixture to soup, along with the chopped carrots, celery, and coconut milk.
  5. Simmer for 30 minutes.
  6. Add salt & pepper to taste.
  7. Top with a little bit of shredded Parmesan cheese, freshly ground pepper, and enjoy!
