Southwest Scramble

Serves: 1

Ingredients:

  • organic avocado oil spray
  • 1 tbs red onion, diced
  • 2 tbs organic black beans, drained and rinsed
  • 2 tbs red bell pepper, large dice
  • 1/4 avocado, mashed
  • 1 wedge of lime juice
  • 1 tsp Frank’s hot sauce
  • 2 eggs
  • 1-2 tbs almond milk

Directions:

  1. Heat 2 small skillets over medium heat and spray lightly with avocado oil.
  2. Sautee the red onion, bell pepper, and black beans for 3 minutes.
  3. Meanwhile, stir eggs, milk, and 1/8 tsp salt and add to the second skillet.  Stir constantly until cooked (1-2 minutes).
  4. Mash the avocado in a small bowl and stir in lime juice and 1/8 tsp salt.
  5. Add the eggs and vegetable mix to a bowl, top with avocado, and sprinkle Frank’s over the scramble.

Note: You can cook everything in one skillet.  It will taste great, but won’t look as good 🙂  You can also add chopped kale or spinach, and / or sliced mushrooms.
