Chia Pudding + Grain-Free Granola + Apples

Serves: 4

Ingredients:

Chia Pudding:

  • 1 cup unsweetened almond milk
  • 1/4 cup chia seeds
  • 1 tsp vanilla
  • 1/4 tsp cinnamon
  • 1/8 tsp salt

Grain-Free Granola:

  • 1/2 cup unsweetened coconut flakes
  • 2 1/2 cups slivered raw almonds (slivered almonds do best here)
  • 1 3/4 cup raw pecans
  • 1 tbs ground flaxseed or 2 tbs hemp seeds
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 3 tbs olive oil
  • 3 tbs maple syrup
  • 2 tsp vanilla

Other:

  • 50 grams of granny smith apple, diced

Directions:

Chia Pudding:

  1. In a bowl, whisk together all of the ingredients.
  2. Cover and refrigerate overnight to thicken.
  3. In the morning, stir the almond chia mixture to combine.

Grain-Free Granola:

  1. Preheat oven to 325 degrees and position a rack in the center of the oven.
  2. In a large mixing bowl, combine the coconut, nuts, flax (or hemp) seeds, cinnamon, and salt.
  3. Add in the maple syrup and vanilla and mix well.
  4. Spread the mixture on the baking sheet and bake for approx. 25-30 minutes, until lightly browned.
  5. Remove from the oven and let cool.

Bringing it All Together:

  1. Place the chia pudding in a bowl, top with 1/4 cup of granola and the apple.
