INGREDIENTS:
- spinach pesto
- 3 plum tomatoes
- 15 pieces of good quality, fresh whole wheat / multi-grain bread, sliced
- 4 oz mozzarella cheese, shredded
DIRECTIONS:
- Make the spinach pesto.
- Preheat the broiler.
- Spread a layer of pesto on each slice of bread.
- Top with tomato slices and mozzarella cheese.
- Place topped bread slices on a cookie sheet and broil for 3-4 minutes, or until cheese is bubbly and lightly browned.
