Mango Salsa #1 Ingredients:
- 1 mango, diced
- 2 tbs red onion, diced
- 1 tbs fresh cilantro, chopped
- 2 tsp fresh lime juice
Mango Salsa #2 Ingredients:
- 2 lg ripe mangos, diced (fresh is best, but frozen works, too)
- 1 medium red bell pepper, chopped
- ½ cup (about 4) thinly sliced green onions
- ¼ cup chopped fresh cilantro
- 1 medium jalapeño, seeds and ribs removed, minced
- 2 tablespoons lime juice
- ¼ teaspoon fine sea salt
Directions:
- Stir all ingredients together in a bowl.
Variations & Notes:
- Costco has a good mango salsa which can be used if you can’t find fresh mangoes.
- Costco also sells frozen organic mango, which could be used instead of fresh.
