Aunt Kathy’s Apple Cake

Apple Cake

Serves: 8

Use a Greased 8″ Spring Form Pan. Preheat Oven to 350 Degrees. Beat the Following for 4 Minutes in a Medium Bowl:

  • 1 1/2 cups sugar
  • 1/2 cup softened butter (unsalted)
  • 1 tsp vanilla
  • 6 oz. softened cream cheese

Add 1 at a Time & Beat in:

  • 2 large eggs

Mix Together & Add to Above at Low Speed Until Blended:

  • 1 1/2 cups of flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Peel & Cut Into Large Dice Pieces:

  • 3 cups of Granny Smith apples (approx. 3 apples)

Mix with Apples:

  • 1/4 cup sugar
  • 2 tsp cinnamon

Fold Cinnamon / Apple Mixture Into Batter.  Put Batter in Pan & Sprinkle Top with:

  • 1/8 cup sugar
  • 1 tsp cinnamon

(Mixed Together)

Bake for 1 to 1 1/4 Hours.

Notes:

The cake can be assembled, but not baked, and frozen. Just thaw overnight in the fridge and bake!
