Balsamic Vinaigrettes

Yield: enough for 4 salads

Ingredients:

Basic Balsamic Vinegar & Olive Oil Dressing:

  • 1/4 cup olive oil
  • 1-2 tbs balsamic vinegar
  • 1/4 tsp salt
  • 1/8 tsp freshly ground pepper

Balsamic Vinaigrette Dressing:

  • 3/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 T dijon mustard
  • 1 garlic clove, minced
  • 1 tbs honey
  • 1/2 tsp salt
  • 1/2 tsp freshly ground pepper

Directions:

  1. Whisk all ingredients in a bowl to blend.
  2. Season with salt and pepper.

  • Apples or Pears + Blue Cheese + Walnuts
  • Feta / Blue Cheese / Goat Cheese + Dried Cranberries + Almonds / Walnuts
  • Blue Cheese + Celery
  • Blue Cheese / Feta + Red Onion + Chickpeas
  • Goat Cheese + Beets + Walnuts
  • Roasted Beets + Goat Cheese + Walnuts
  • Mushrooms + “Bacon” + Cherry Tomatoes + Blue Cheese / Feta / Parmesan + Spinach
  • Feta + Red Onion + Olives + Cherry Tomatoes + Cucumber (peeled) + Dried Oregano (No Lettuce)
  • Tomatoes (sliced) + Mozzarella + Olive Oil + Salt + Pepper + a Little Vinegar + Basil (No Lettuce)
  • Beets + Kidney Beans + Goat Cheese + Red Onions + Walnuts
  • Beets + Goat Cheese + Walnut + Cranberries + Avocado + Arugula
  • Carrots + Sesame Seeds + Black Beans + Corn + Smoked Cheddar + Almonds + Dried Cranberries + Cherry Toms
  • Cherry Toms + Dried Cranberries + Toasted Almonds + Carrots + Zucchini
  • Cherry Toms + Cucumber + Daikon (mild radish) + Croutons + Carrots + Blue Cheese
