Broccoli + Rice + Avocado Salad with Toasted Almonds + Vegan Ranch

Serves: 1

Ingredients:

  • 5 oz precooked brown rice
  • 1/2 cups broccoli florets, chopped into bite-size pieces
  • 1/2 avocado, diced
  • 1 T fresh dill, fronds picked and roughly chopped
  • 10 almonds (or pistachios), toasted & chopped
  • 1 T Gotham Greens Vegan Ranch Dressing + 1 tsp water to thin
  • 4 ounces of baked tofu or grilled chicken*, cut into bite-size pieces
  • 1 wedge of lemon

* We like WestEnd Cuisine Grilled Chicken Skewers, Mediterranean Style (Costco).

Directions:

  1. Bring a small saucepan of salted water to a boil for the broccoli.  Add broccoli to the boiling water and cook for 2-3 minutes. Drain the broccoli.
  2. Place the brown rice in a bowl. Add broccoli, avocado, protein, and dill. Top with almonds and drizzle with the dressing and lemon juice.

Variation:

  • Replace the tofu or chicken with marinated & cooked seitan.
