Ingredients:
Dressing:
- 1/3 cup Lemon Basil Pesto or Costco Pesto
- 1 T white wine vinegar
- juice of 1 lemon
- 1/4 tsp crushed red pepper flakes
- 1 T extra virgin olive oil
Croutons:
- 2-3 slices of sourdough bread, cut into cubes
- 1 tsp everything bagel spice (Costco sells a great one)
- 2 T extra virgin olive oil
- 1/4-1/2 tsp salt
Salad:
- 1 15-oz can of cannellini beans, drained & rinsed
- 6 cups baby arugula (or a mix or arugula and spinach)
- 1/4 cup freshly shaved parmesan or pecorino cheese (optional)
- 1 T everything bagel spice
Directions:
- Dressing:
Toss together the pesto, 1 T of olive oil, vinegar, lemon juice, and red pepper flakes. - Croutons:
Heat 2 T of olive oil in a skillet over medium heat. Add in the sourdough cubes, everything bagel spice, and salt. Cook until lightly toasted. Set aside. - Salad:
Add and toss the beans and dressing in a medium bowl. Add the arugula, parmesan / pecorino, and everything bagel spice. Toss to combine. - Serve:
Divide the salad into 4 bowls and top with the croutons. Serve immediately.
