Everything Bagel Salad

Everything Bagel Salad

Serves: 4



  • 1/3 cup Lemon Basil Pesto or Costco Pesto
  • 1 T white wine vinegar
  • juice of 1 lemon
  • 1/4 tsp sea salt
  • 1/4 tsp crushed red pepper flakes
  • 1 T extra virgin olive oil


  • 2-3 slices of sourdough bread, cut into cubes
  • 1 tsp everything bagel spice (Costco sells a great one)
  • 2 T extra virgin olive oil
  • 1/4-1/2 tsp salt


  • 1 15-oz can of cannellini beans, drained & rinsed
  • 6 cups baby arugula (or a mix or arugula and spinach)
  • 1/4 cup freshly shaved parmesan or pecorino cheese (optional)
  • 1 T everything bagel spice


  1. Dressing:
    Toss together the pesto, 1 T of olive oil, vinegar, lemon juice, salt, and red pepper flakes.
  2. Croutons:
    Heat 2 T of olive oil in a skillet over medium heat. Add in the sourdough cubes, everything bagel spice, and salt. Cook until lightly toasted. Set aside.
  3. Salad:
    Add and toss the beans and dressing in a medium bowl. Add the arugula, parmesan / pecorino, and everything bagel spice. Toss to combine.
  4. Serve:
    Divide the salad into 4 bowls and top with the croutons. Serve immediately.
