Serves: 4
Ingredients:
- Whole wheat pizza dough
- 1 cup balsamic vinegar
- 1 tbs maple syrup
- Walnut Pesto (fresh or Costco’s)
- 1 lg. sweet potato, peeled and cut into bite sizes
- 2 tbs. olive oil
- 1/2 bunch of kale (cut into bite size pieces)
- salt & pepper
Directions:
- Make the pizza dough in advance and pull from the freezer or fridge to bring to room temperature.
- Make the pesto by adding all ingredients to a blender (can do ahead of time).
- For the balsamic reduction, cook the balsamic vinegar over medium-low heat until it boils. Reduce heat and simmer for 20 minutes. Remove from heat and mix in maple syrup.
- For the sweet potatoes, turn the oven to 400. Toss the sweet potato with olive oil and salt and pepper. Cook on a cookie sheet in the oven for approx. 25 minutes (or until fork tender).
- Turn the oven to 425 degrees.
- Rollout the pizza dough on a stone and add pesto and sweet potatoes.
- Bake for approx. 15 minutes (watch it) in a 425 degree oven.
- Saute the kale in olive oil, salt & pepper for a few minutes and place on cooked pizza.
- Drizzle the balsamic reduction over the pizzas.
- Serve immediately.
