
Serves: 1
Ingredients:
- organic avocado oil spray
 - 1 tbs red onion, diced
 - 2 tbs organic black beans, drained and rinsed
 - 2 tbs red bell pepper, large dice
 - 1/4 avocado, mashed
 - 1 wedge of lime juice
 - 1 tsp Frank’s hot sauce
 - 2 eggs
 - 1-2 tbs almond milk
 
Directions:
- Heat 2 small skillets over medium heat and spray lightly with avocado oil.
 - Sautee the red onion, bell pepper, and black beans for 3 minutes.
 - Meanwhile, stir eggs, milk, and 1/8 tsp salt and add to the second skillet. Stir constantly until cooked (1-2 minutes).
 - Mash the avocado in a small bowl and stir in lime juice and 1/8 tsp salt.
 - Add the eggs and vegetable mix to a bowl, top with avocado, and sprinkle Frank’s over the scramble.
 
Note: You can cook everything in one skillet. It will taste great, but won’t look as good 🙂 You can also add chopped kale or spinach, and / or sliced mushrooms.
