Sun-Dried Tomato Dip

Serves: 4

Ingredients:

Dip:

  • 1 medium-to-large fresh tomato, cut into chunks
  • 1 cup sun-dried tomatoes in olive oil, drained
  • 1 clove garlic
  • 1 tbs fresh parsley
  • 1/4 cup extra virgin olive oil
  • 1 tbs raw pine nuts
  • 1/2 tsp salt and 1/2 tsp freshly ground black pepper, adjust to taste

Vegetables:

  • Sliced cucumbers, zucchini, or bell peppers

Directions:

  1. Blend all the ingredients in a blender until smooth.
  2. Serve with sliced cucumbers, zucchini, or bell peppers.
