Ingredients:
Dip:
- 1 medium-to-large fresh tomato, cut into chunks
- 1 cup sun-dried tomatoes in olive oil, drained
- 1 clove garlic
- 1 tbs fresh parsley
- 1/4 cup extra virgin olive oil
- 1 tbs raw pine nuts
- 1/2 tsp salt and 1/2 tsp freshly ground black pepper, adjust to taste
Vegetables:
- Sliced cucumbers, zucchini, or bell peppers
Directions:
- Blend all the ingredients in a blender until smooth.
- Serve with sliced cucumbers, zucchini, or bell peppers.
