Quesadillas

Serves: 4

To say this a family favorite, is a huge under-statement.  We eat these at least once a week, as this is my go to recipe when I just don’t have the energy to cook! It never fails to amaze me how excited everyone gets when they ask “What’s for dinner?” and I answer, “Quesadillas.”

Ingredients:

Guacamole:

  • 2 avocados
  • 1/2 t salt
  • 1/4-1/2 lime, juiced

Basic Bean Mixture:

  • 2 15-oz cans organic black beans
  • 3/4 tsp ground cumin
  • 1/2 tsp kosher salt
  • freshly ground pepper, to taste

Out of this World Bean Mixture:

  • 2 15-oz cans organic black beans
  • 1 lime, juiced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 yellow or red onion, diced (can use shallots too)
  • 1/2 tbs olive oil
  • 3/4 tsp ground cumin
  • 1/2 tsp kosher salt
  • freshly ground pepper, to taste

Other Ingredients:

  • 1 cup cheddar cheese, shredded
  • 8 tortillas (we love Costco’s organic tortillas)
  • Frank’s RedHot hot sauce (optional)

Directions:

  1. In a bowl, stir the black beans with the cumin and 1/2 teaspoon of salt (and all other ingredients if making the “Out of this World” version).
  2. Sprinkle a layer of cheese (2 tbs per quesadilla) evenly over tortilla, add a layer of the bean mixture.
  3. Top with a second tortilla.
  4. Cook until golden on both sides, for approximately 2 to 3 minutes per side.  If using a panini maker, total time is 2-3 minutes.
  5. Remove quesadilla from pan and serve with the guacamole and hot sauce (if desired) on top.
