Ingredients:
- 1 large head of romaine lettuce, chopped
- 2 Roma tomatoes, sliced
- 1 English cucumber, diced
- 1/2 cup of Kalamata olives, sliced
- 1/2 cup of banana peppers, sliced (optional)
- 1/2 cup of feta cheese, cut into small cubes
- 1/4 cup red onions
- 14 ounces of baked tofu (optional)
- 1 15-oz can of chickpeas, seasoned & roasted (optional)
- 1 avocado, diced (optional)
- Tahini dressing
Directions:
- Add the romaine lettuce to a bowl.
- Top with ingredients.
- Drizzle the dressing over the top and toss the salad.
- Sprinkle with salt & pepper.
- Stir & enjoy!
