Tahini Salad Dressing

Tahini Salad

Serves: 4 (3-4 T Servings)

Ingredients:

Tahini Dressing:

  • 1/3 cup tahini
  • 3 T lemon juice
  • 1 T maple syrup
  • 1/2 t Dijon mustard
  • 1 clove garlic, minced
  • 1/4 salt (or more to taste)
  • water to thin dressing (3-6 T)

Parmesan Tahini Dressing:

  • 1/4 cup extra virgin olive oil*
  • juice of 2 large lemons
  • 1/2 tsp Dijon mustard
  • 1/4 cup tahini
  • 4 tsp Worcestershire sauce
  • 2 cloves garlic, grated
  • 1/4-1/2 tsp kosher salt and black pepper
  • 1/3 – 1/2 cup grated parmesan, plus more for serving
  • 1/4 cup fresh chopped parsley

*Try without the oil before adding. I forgot to add it last time, and it was good!

Directions:

  1. Add the garlic clove to a small food processor.
  2. Add in all other ingredients, except the water.
  3. Blend and add water until you get the desired consistency.
  4. Taste and add salt as needed.
