Yield: 4 salads, except the lemon vinaigrette, which is 3/4 cup (enough for 8 salads)
Ingredients:
Lemon & Pecorino / Parmesan Dressing:
- 2 garlic cloves, finely chopped
- 1/4 cup finely grated pecorino or hard parmesan cheese
- 6 tbs avocado oil
- Freshly squeezed juice of 2 lemons (4-5 tbs)
- 1/2 tsp kosher salt
- 1/4 tsp red pepper flakes
- Freshly ground black pepper, to taste
Basic Lemon & Avocado Oil Dressing:
- 1/4 cup avocado oil
- 2 tbs lemon juice
- 1 clove garlic, minced
- 1/4 tsp salt
- 1/8 tsp freshly ground pepper
Lemon Vinaigrette Dressing:
- 1/2 cup olive oil
- 1/4 cup (4 tbs) lemon juice
- 4 tsp honey
- 4 tsp dijon mustard
- 4 cloves of garlic, minced
- pinch of red pepper flakes
- 1 tsp salt
- freshly ground pepper
Honey Lime Vinaigrette:
- 4 tbs olive oil
- 2 tbs honey
- 1/2 cup lime juice
- 2 cloves garlic, minced
- 2 tsp cumin
- 1 tsp coriander
- 1 tsp smoked paprika
- 3/4 tsp sea salt
- 1/4 tsp pepper
Directions:
- Whisk all ingredients in a bowl to blend.
- Season with salt and pepper.
