Serves: 4
Ingredients:
- 2 sweet potatoes
- 2 tbs olive oil
- 1/4 tsp salt
Directions:
- Preheat the oven to 250 degrees F and position a rack in the center of the oven.
- Peel the sweet potatoes and slice them in a food processor (or using a mandolin) on the thinnest setting (1/8″ thick).
- Toss potatoes with olive oil, sprinkle in salt.
- Lay out in a single layer (none should be touching) on a baking sheet.
- Bake for 40 minutes, then flip each potato. Bake for approximately 30 more minutes (check to see that they are crisp and golden brown).
- Let them rest for 10 minutes, they will crisp up more while resting.
- Serve within a few hours.
Variations & Notes:
- If making more at once, use cooling racks on the baking sheet to create stacks.
