Serves: 4
Ingredients:
Kale Pesto:
- 4 cups (approx. 1 bunch) roughly chopped curly kale leaves
- 1/2 cup raw cashews
- 1/2 cup olive oil
- 3 garlic cloves
- 2 tbs lemon juice
- 1 tsp sea salt
- freshly ground black pepper
Everything Else:
- 1 lb linguine
- crushed red pepper flakes (optional)
Directions:
- Bring a large pot of salted water to a boil over high heat.
- Add the pasta and cook until it is al dente.
- Drain the pasta and return it to the pot.
- Meanwhile, in a food processor, mince the garlic cloves.
- Add in the kale, cashews, olive oil, garlic lemon juice, and salt, and process until smooth.
- Season with black pepper.
- Toss the pesto with the pasta. Serve immediately with a pinch of red pepper flakes (if desired).
