Kale Pesto + Linguine

Serves: 4


Kale Pesto:

  • 4 cups (approx. 1 bunch) roughly chopped curly kale leaves
  • 1/2 cup raw cashews
  • 1/2 cup olive oil
  • 3 garlic cloves
  • 2 tbs lemon juice
  • 1 tsp sea salt
  • freshly ground black pepper

Everything Else:

  • 1 lb linguine
  • crushed red pepper flakes (optional)


  1. Bring a large pot of salted water to a boil over high heat.
  2. Add the pasta and cook until it is al dente.
  3. Drain the pasta and return it to the pot.
  4. Meanwhile, in a food processor, mince the garlic cloves.
  5. Add in the kale, cashews, olive oil, garlic lemon juice, and salt, and process until smooth.
  6. Season with black pepper.
  7. Toss the pesto with the pasta. Serve immediately with a pinch of red pepper flakes (if desired).
