Makes: 2 cups
Ingredients:
- 1 1/2 cups (225g) raw cashews
- 3/4 cup water
- 2 tbs fresh lemon juice
- 2 tsp apple cider vinegar
- 1/2 tsp sea salt
Directions:
- Combine all ingredients in a high-powered blender (such as a Vitamix) and blend until smooth.
- Taste and add more salt as desired.
Variations & Notes:
- Lime Crema: Substitute lemon juice with lime juice, and add 1/4 cup fresh cilantro to the blender.
- Chipotle Sour Cream: Omit the apple cider vinegar. Add 1/2-1 chipotle in adobe sauce and 2 small garlic cloves.
