Chipotle Sour Cream

Cashew Sour Cream

Makes: 2 cups


  • 1 1/2 cups (225g) raw cashews
  • 3/4 cup water
  • 2 tbs fresh lemon juice
  • 2 tsp apple cider vinegar
  • 1/2 tsp sea salt


  1. Combine all ingredients in a high-powered blender (such as a Vitamix) and blend until smooth.
  2. Taste and add more salt as desired.

Variations & Notes:

  • Lime Crema: Substitute lemon juice with lime juice, and add 1/4 cup fresh cilantro to the blender.
  • Chipotle Sour Cream: Omit the apple cider vinegar. Add 1/2-1 chipotle in adobe sauce and 2 small garlic cloves.
