Makes: 16 bars
Ingredients:
Component 1:
- 2 cups pitted dates
- 1 1/2 cups unsweetened shredded coconut
- 1 cup raw, unsalted cashews
- 1/3 cup unsweetened cocoa powder
- 2 tbs olive oil
- 1/4 tsp sea salt
Directions:
- In a food processor, combine the dates, coconut, cashews, cocoa, olive oil and salt.
- Process on high for 1-2 minutes, stopping once or twice to scrape down the sides of the bowl.
- Blend until the ingredients clump together.
- Line an 8×8″ baking dish with parchment paper. Add the mixture and spread out. Use a metal spatula to firmly press into an even layer that fills the entire dish.
- Place in the fridge for 30 minutes and then slice into 16 bars with a pizza cutter.
