Chocolate Coconut Cashew Energy Bars

Makes: 16 bars


Component 1:

  • 2 cups pitted dates
  • 1 1/2 cups unsweetened shredded coconut
  • 1 cup raw, unsalted cashews
  • 1/3 cup unsweetened cocoa powder
  • 2 tbs olive oil
  • 1/4 tsp sea salt


  1. In a food processor, combine the dates, coconut, cashews, cocoa, olive oil and salt.
  2. Process on high for 1-2 minutes, stopping once or twice to scrape down the sides of the bowl.
  3. Blend until the ingredients clump together.
  4. Line an 8×8″ baking dish with parchment paper. Add the mixture and spread out. Use a metal spatula to firmly press into an even layer that fills the entire dish.
  5. Place in the fridge for 30 minutes and then slice into 16 bars with a pizza cutter.
