Energy Balls

Makes: 20 Balls

Ingredients:

Energy Balls

  • 1 cup raw cashews
  • 1/2 cup oats
  • 1/2 cup pitted Medjool dates
  • 1 tbs pure maple syrup
  • 1 tbs almond butter
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp salt
  • 2 tbs dark chocolate chips

Directions:

  1. In a food processor, combine the cashew and oats and process until a semi-fine flour forms (30-60 seconds). Don’t over process or it will turn into butter.
  2. Add the dates and process again until they are finely chopped.
  3. Add the maple syrup, almond butter, vanilla, and salt. Process until combined.  The dough should stick together when you press it.  If it’s too dry, add a tsp of water and process again.
  4. Pulse in the chocolate chips until combined.
  5. Roll dough into balls (1 heaping tablespoon for each) and place in the freezer for at least 30 minutes.

Pumpkin Energy Balls

  • 1 1/4 cups old-fashioned rolled oats
  • 1/4 cup ground flaxseed
  • 1 tablespoon chia seeds
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • A pinch of sea salt
  • 1/2 cup creamy almond butter
  • 1/4 cup pumpkin
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 cup mini dark chocolate chips

Directions:

  1. In the bowl of a stand mixer, add the oats, flaxseed, chia seeds, cinnamon, ginger, nutmeg, cloves, and salt. With the paddle attachment, mix on low until ingredients are combined.
  2. Add the almond butter, pumpkin, honey, and vanilla. Mix until the ingredients come together.
  3. Stir in the mini chocolate chips.
  4. Roll the mixture into balls, about 1 tablespoons per ball.

Note

Store in the freezer.
