Green Beans + Parmesan + Garlic

Serves: 4

Ingredients:

  • 1 lb. green beans, trimmed (fresh or frozen from Costco)
  • 2 tbs olive oil
  • 1/2 tsp sea salt & 1/2 tsp black pepper
  • 1/2 tsp garlic powder (plus more to taste)
  • 1/4 cup sliced almonds, roasted
  • 1/4 cup parmesan cheese, grated
  • 1/4 of a fresh lemon

Directions:

  1. Steam the green beans until slightly tender, don’t fully cook. Skip this step if using frozen beans.
  2. Heat the oil in a large skillet or pot over medium-high heat.
  3. Add the green beans.
  4. Season with salt, pepper, and garlic powder. Stir together. Cover and cook for 12-15 minutes (until they are cooked), stirring frequently.
  5. Reduce the heat if the beans are browning too quickly. For crispier green beans, remove the lid for the last 4 minutes.
  6. Remove from heat and stir in the sliced almonds and parmesan.
  7. Sprinkle lemon juice over beans, stir, taste, and add more seasonings, if needed.
