Serves: 4
Ingredients:
Vinaigrette:
- ½ tsp sea salt
- 4 tbs extra-virgin olive oil
- 2 tbs lemon juice (1 lemon)
- 4 tsp Dijon mustard
- 1 lg clove garlic, minced
- Several twists of freshly ground black pepper
- Pinch of red pepper flakes
Green Beans + Almonds + Feta:
- 1 1/2 lbs green beans, ends trimmed, cut into 2-3″ pieces
- 1/3 cup sliced almonds
- 1/4 cup crumbled feta cheese, divided
- 3-4 large basil leaves, chopped
- lemon zest from 1/2 lemon, for garnish
Directions:
Vinaigrette:
- Place the garlic in a small food processor and mince.
- Add all other ingredients and blend until smooth.
Green Beans + Almonds + Feta:
- Steam the green beans until cooked.
- Toast the almonds in a non-stick skillet on medium heat for 5 minutes, stirring often.
- Add the vinaigrette to the green beans and stir to combine.
- Add in the toasted almonds and half of the feta. Toss to combine.
- Taste and add more lemon juice or black pepper, if needed.
- Transfer the green beans to a serving bowl.
- Sprinkle the remaining feta and basil over the top.
- Grate the lemon zest on top and serve immediately.
