Green Beans + Toasted Almonds + Feta

Serves: 4

Ingredients:

Vinaigrette:

  • ½ tsp sea salt
  • 4 tbs extra-virgin olive oil
  • 2 tbs lemon juice (1 lemon)
  • 4 tsp Dijon mustard
  • 1 lg clove garlic, minced
  • Several twists of freshly ground black pepper
  • Pinch of red pepper flakes

Green Beans + Almonds + Feta:

  • 1 1/2 lbs green beans, ends trimmed, cut into 2-3″ pieces
  • 1/3 cup sliced almonds
  • 1/4 cup crumbled feta cheese, divided
  • 3-4 large basil leaves, chopped
  • lemon zest from 1/2 lemon, for garnish

Directions:

Vinaigrette:

  1. Place the garlic in a small food processor and mince.
  2. Add all other ingredients and blend until smooth.

Green Beans + Almonds + Feta:

  1. Steam the green beans until cooked.
  2. Toast the almonds in a non-stick skillet on medium heat for 5 minutes, stirring often.
  3. Add the vinaigrette to the green beans and stir to combine.
  4. Add in the toasted almonds and half of the feta.  Toss to combine.
  5. Taste and add more lemon juice or black pepper, if needed.
  6. Transfer the green beans to a serving bowl.
  7. Sprinkle the remaining feta and basil over the top.
  8. Grate the lemon zest on top and serve immediately.
