Guacamole & Chips

Serves: 6 (approximately 2 1/2 cups)

Ingredients:

  • 1/4 – 1 jalapeno (depending on your spice preference)
  • 1/2 small white or red onion, finely chopped
  • 2 plum tomatoes, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 3 medium-large ripe avocados
  • 1 teaspoon salt
  • 1-2 tbs fresh lime juice
  • Mary’s Gone Crackers Original Gluten Free Chips
  • Red, yellow, or orange bell peppers, cut into chip size chunks (optional)
  • Carrots or celery, cut into scoopable pieces (optional)

Directions:

  1. Add all ingredients, except for the chips, to a bowl.
  2. Stir well (using a fork to mash the avocado).
  3. Serve immediately with chips and / or vegetables.
