Ingredients:
Maple Pecan Granola:
- 3 cups rolled oats
- 1 cup coarsely chopped pecans
- 2 tsp cinnamon
- 1/4 tsp sea salt
- 1/2 cup pure maple syrup
- 4 tbs olive oil
- 2 tsp vanilla extract
Almond Butter Berry Sauce:
- 3 frozen bananas
- 1 cup frozen blueberries
- 2 tbs almond butter
- Unsweetened almond milk
Toppings:
- Fresh berries
- Shredded unsweetened coconut
- Chia seeds
Directions:
Maple Pecan Granola:
- Preheat the oven to 325 degrees F and line a large baking sheet with parchment paper.
- Stir together the oats, pecans, cinnamon, and salt in a large bowl.
- Add the maple syrup, oil, and vanilla. Stir to coat.
- Spread the mixture on the baking sheet and bake for approx 25-30 minutes, until lightly browned.
- Remove from the oven and let cool.
Almond Butter Berry Sauce:
- Combine the bananas, blueberries, and almond butter in a blender and blend until smooth.
- If needed, add almond milk, 1 tbs. at a time, to thin.
Bringing it All Together:
- Serve the granola in bowls with dollops of the almond butter berry sauce and top with fresh berries, coconut, or chia seeds.
