Serves: 4
Ingredients:
- 2 1/2 cups veggie broth
- 1 1/2 cups uncooked brown rice
- 3/4 cup Roasted Salsa (Salsa #2)
- 1/4-1/2 tsp salt to taste
Directions:
- Add the broth, rice, salsa, and salt into a medium pot and bring to a boil.
- Cover and turn the heat to low. Simmer for 45 minutes.
- Turn off the heat and let sit for 15 minutes.
- Fluff with a fork and enjoy!
