Pasta Carbonara Sauce

Serves: 4

Ingredients:

  • 2 tbs olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 14 ounces soft tofu
  • 1/2 cup water
  • 2 tbs lemon juice
  • 2 tsp sea salt
  • freshly ground black pepper

Directions:

  1. Heat oil in a medium skillet over medium heat.
  2. Add onions and cook approx. 5 minutes, until translucent.
  3. Add garlic and cook a few more minutes.
  4. Transfer to a blender and add tofu, water, lemon juice, and salt.
  5. Process on high until very smooth (approx. 2 minutes)
