Sweet Corn + Arugula + Red Onion Salad

Serves: 4



  • 5 oz arugula
  • 1 cup fresh corn (approx. 1 ear)
  • 1/4 red onion, chopped
  • 10-15 cherry tomatoes, sliced
  • 1/8-1/4 cup cotija cheese, shredded


  • 2 tbs olive oil
  • 1 tbs lemon juice
  • 1 tsp salt
  • ½ tsp pepper


  1. Cook the ear of corn in the microwave for 5-6 minutes, then while running them under cold water, remove the husks.
  2. Dry the corn and then cut the kernels off and place in a large bowl.
  3. Add remaining ingredients, stir to combine.
  4. Place on 4 plates and sprinkle the cheese over each salad.
