Tacos Al Pastor

Serves: 4



  • Approx. 3 cups cauliflower florets, cut into bite-size pieces
  • 8 oz. can diced pineapple, drained
  • 2 tbs olive oil
  • 2 tsp taco seasoning
  • 1/2 tsp sea salt
  • 8 small soft corn tortillas
  • cashew queso, warmed



  1. Preheat the oven to 425 degrees F.
  2. Toss the cauliflower with the pineapple, olive oil, taco seasoning, and salt and place on a rimmed baking sheet.
  3. Arrange in one layer and roast for 20-30 minutes, until the cauliflower is tender and nicely charred.
  4. Taste and adjust seasoning, if needed.
  5. Heat a tortilla on a panini maker or skillet over medium-high heat for 20-30 seconds. Flip if using a skillet and cook for another 20-30 seconds, until pliable and hot.
  6. Layer cauliflower mixture, cashew queso, pickled onions, and guacamole.
  7. Garnish with cilantro and serve with lime wedges.
