Tofu-Veggie Scramble

Serves: 3

Ingredients:

  • 16 oz super-firm tofu
  • 3 tbs nutritional yeast
  • ¾ tsp salt
  • ½ tsp ground turmeric
  • ¼ tsp smoked paprika
  • 2 tbs extra-virgin olive oil
  • 2 cups chopped vegetables, such as broccoli, brussels sprouts, mushrooms, red bell pepper, kale, red onions, or cherry tomatoes
  • ½ tsp salt
  • ¼ tsp black pepper
  • guacamole

Directions:

  1. Crumble the tofu into a medium bowl.
  2. In a small bowl stir together the nutritional yeast, 3/4 tsp salt, turmeric, and smoked paprika.
  3. Stir the seasoning in with the tofu.
  4. Make the guacamole.
  5. In a large skillet, heat 1 tablespoon oil over medium heat.
  6. Add the vegetables and season with salt and black pepper. Cook, stirring often, until crisp-tender, about 3 minutes. Remove the veggies to a large bowl.
  7. Add 1 tablespoon oil to the skillet. Add the seasoned tofu and cook, stirring, until tofu is heated through, about 3 minutes. Stir vegetables and tofu together and cook 1 minute more.
  8. Divide scramble among 3 serving plates and top with guacamole.
