Vegan Parmesan

Vegan Parmesan

Yield: 3/4-1 cup


Version 1

  • 3/4 cup raw cashews
  • 3 tbs nutritional yeast
  • 1/4 tsp sea salt
  • 1/4 tsp garlic powder

Version 2:

  • 3/4 cup raw cashews
  • 1 garlic clove
  • 1 tbs nutritional yeast
  • 1 tbs olive oil
  • 1/2 tsp garlic powder
  • sea salt to taste

Version 3:

  • ½ cup hemp seeds
  • ¼ cup nutritional yeast
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp fine sea salt, to taste (I usually add a pinch or two more after tasting).


  1. All all ingredients to a food processor bowl and pulse until the mixture is combined (You don’t need to do this for variation #3 — In this case, all ingredients can be added to a bowl and stirred.)
  2. Salt to taste.
  3. Serve on top of pizza, pastas, salads, avocado toast, etc. Use to add flavor and thicken creamy pasta sauces.
