Whole Wheat Waffles

Serves: 4

Ingredients:

  • 3 cups King Arthur white whole wheat flour
  • 4 tsp baking powder
  • 1 tsp salt
  • 4 tbs honey
  • 2 flax eggs (2 tbs ground flaxseed + 5 tbs water whisked)
  • 3 cups lukewarm non-dairy milk (I use unsweetened almond milk)
  • 1/3 cup olive oil
  • Honey, maple syrup, peanut butter (for serving with the waffles)
  • Fresh fruit: blueberries, strawberries, bananas (optional)

Directions:

  1. Preheat the waffle iron.
  2. Whisk together the flour, baking powder, and salt.
  3. In a separate bowl, whisk together the flax eggs, milk, honey, and oil.
  4. Mix together the wet and dry ingredients, stirring until just combined. It’s okay if the batter is lumpy.
  5. Cook the waffles as directed in the instructions that came with your waffle iron.
  6. Serve with honey, maple syrup, peanut butter, and fresh fruit (if desired).

Variations & Notes:

  • If you or your family are sensitive to whole wheat’s sometimes assertive flavor, try substituting 2 tablespoons orange juice for 2 tablespoons of the milk in this recipe. The OJ tames whole wheat’s potentially tannic taste, without adding any citrus flavor of its own.
