Peanut Butter Banana Baked Oatmeal

Serves: 4

Ingredients:

Dry Ingredients:

  • 2 cups old fashioned oats
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt

Wet Ingredients:

  • 2 medium ripe bananas mashed (about ¾ cup)
  • 1/4 cup creamy peanut butter
  • 2 tbs honey
  • 1 flax egg (1 tbs flax seeds + 2 tbs water, stirred)
  • 1 cup vanilla unsweetened almond milk
  • 1 teaspoon vanilla extract

Toppings:

  • Banana slices peanut butter, and honey, for serving, optional

Directions:

  1. Preheat oven to 350 degrees F. Line a muffin pan with 12 muffin cups.
  2. In a medium bowl, combine the dry ingredients: Oats, baking powder, cinnamon and salt. Set aside.
  3. In a large bowl (I use an 8-cup measuring cup), combine the wet ingredients: Mashed banana and peanut butter. Stir until smooth. Add in the honey, flax egg, milk, and vanilla extract. Stir until well combined.
  4. Add the dry ingredients to the wet ingredients and stir. Pour the oatmeal mixture into the muffin cups.
  5. Bake for 25-30 minutes or until the oatmeal is set or until the oatmeal springs back when lightly touched and is slightly golden brown around the edges.
  6. Remove from the oven and cut into squares. Serve warm with banana slices and a drizzle of peanut butter and honey, if desired.

Variations & Notes:

  • Keep the remaining baked oatmeal in the refrigerator for up to a week. Just reheat it when you’re ready to enjoy!
